* 1 cup sourdough starter (active and bubbly)
* 1 cup all-purpose flour
* 1 tablespoon sugar
* 1/2 teaspoon salt
* 1/2 teaspoon baking soda
* 1 cup milk (or buttermilk)
* 1 large egg
* 2 tablespoons unsalted butter, melted
* 1 teaspoon vanilla extract (optional)
1. In a large bowl, mix together the sourdough starter, flour, sugar, and salt until well combined.
2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
3. Combine the wet ingredients with the dry ingredients, stirring just until incorporated; do not overmix. The batter should be slightly lumpy.
4. Let the batter sit for about 10 minutes to allow it to rise and become bubbly.
5. Preheat a large skillet or griddle over medium heat and lightly grease it with butter or oil.
6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
7. Repeat with the remaining batter, adjusting the heat as necessary.
