* 2 cups all-purpose flour
* 1/2 cup mature sourdough starter
* 1/2 teaspoon baking powder
* 1 teaspoon smoked paprika
* 1 chipotle pepper in adobo sauce, finely chopped
* 1/2 teaspoon salt
* 3/4 cup warm water
* 1 tablespoon olive oil
1. In a large mixing bowl, combine the flour, baking powder, smoked paprika, and salt. Mix well.
2. Add the mature sourdough starter, chopped chipotle pepper, olive oil, and warm water to the dry ingredients.
3. Mix until a rough dough forms, then knead on a lightly floured surface for about 5-7 minutes until smooth and elastic.
4. Cover the dough with a clean kitchen towel and let it rest for 30 minutes at room temperature.
5. Divide the dough into 8 equal pieces and shape each piece into a ball.
6. On a floured surface, roll each ball into a thin circle about 8 inches in diameter.
7. Heat a cast-iron skillet or flat pan over medium-high heat. Cook each tortilla for about 1-2 minutes per side, until bubbles form and the tortilla has golden spots.
8. Keep the cooked tortillas warm in a tortilla warmer or wrapped in a clean kitchen towel.
9. Serve warm with your favorite toppings or dishes.
