* 4 cups all-purpose flour
* 1 packet (2 1/4 tsp) active dry yeast
* 1 3/4 cups warm water (110°F)
* 1/4 cup olive oil
* 1 tablespoon sea salt
* 1 tablespoon sugar
* 1 teaspoon dried oregano
* 1 teaspoon dried thyme
* 1/2 cup pitted olives (Kalamata or green), sliced
* 1/2 cup cherry tomatoes, halved
* 1/4 cup thinly sliced red onion
* Fresh rosemary sprigs for garnish
* Flaky sea salt for topping
1. In a large mixing bowl, combine warm water and sugar. Sprinkle yeast over the top and let it sit for about 5-10 minutes until it's foamy.
2. Add in the olive oil, sea salt, oregano, and thyme to the yeast mixture. Stir to combine thoroughly.
3. Gradually add the flour, mixing until the dough comes together. Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic.
4. Place the dough in a greased bowl and cover with a damp cloth. Allow it to rise in a warm place for 1-2 hours or until it doubles in size.
5. Once risen, preheat the oven to 425°F (220°C).
6. Grease a large baking sheet or a 12x17 inch pan with olive oil.
7. Transfer the dough to the prepared pan and spread it out gently using your fingers. You can make dimples in the dough for a classic focaccia look.
8. Evenly distribute the olives, cherry tomatoes, and red onion over the top of the dough, pressing them in slightly. Drizzle with olive oil and sprinkle with flaky sea salt.
9. Let the dough rise again for about 20-30 minutes, then bake in the preheated oven for 20-25 minutes until golden brown.
10. Remove from the oven and let cool slightly. Garnish with fresh rosemary sprigs before slicing and serving.
