* 3 cups bread flour * 1 cup active sourdough starter * 1 1/4 cups warm water * 1 tablespoon salt * 2 tablespoons olive oil * 1 tablespoon mixed dried herbs (e.g. thyme, rosemary, oregano) * 1 tablespoon minced fresh parsley * 1 teaspoon minced garlic * 1 teaspoon black pepper
1. In a large mixing bowl, combine the bread flour, salt, black pepper, and dried herbs. Mix well. 2. In a separate bowl, mix the active sourdough starter with warm water and olive oil until smooth. 3. Pour the starter mixture into the flour mixture and combine until a dough forms. 4. Add minced garlic and fresh parsley to the dough and knead for about 10 minutes until smooth and elastic. 5. Cover the bowl with a damp cloth and let it rise in a warm place for about 4-6 hours, or until doubled in size. 6. Once the dough has risen, turn it out onto a lightly floured surface and shape it into a round or oval loaf. 7. Place the shaped dough in a proofing basket (or on a baking sheet) and let it rise for another 1-2 hours, covered. 8. Preheat the oven to 450°F (230°C). If using a Dutch oven, place it in the oven to heat up as well. 9. Once the dough has risen again, carefully place it onto a parchment paper-lined baking sheet or into the hot Dutch oven. 10. Score the top of the loaf with a sharp knife for better oven spring. 11. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and hollow-sounding when tapped on the bottom. 12. Remove from the oven and let it cool on a wire rack before slicing.
