* 500g sourdough bread dough * 150g fresh spinach, chopped * 100g feta cheese, crumbled * 2 cloves garlic, minced * 2 tablespoons olive oil * 1 teaspoon dried oregano * Salt and pepper to taste * 1 egg (for egg wash) * Sesame seeds (for topping)
1. Preheat your oven to 220°C (428°F). 2. In a medium bowl, combine chopped spinach, crumbled feta cheese, minced garlic, olive oil, oregano, salt, and pepper. Mix well until evenly combined. 3. On a floured surface, roll out the sourdough bread dough into a rectangular shape (about 1/2 inch thick). 4. Spread the spinach and feta mixture evenly over the dough, leaving a small border around the edges. 5. Carefully roll the dough into a tight log starting from one long side. 6. Once rolled, slice the log in half lengthwise to expose the filling. 7. Twist the two halves together, forming a spiral shape. Place the twisted dough onto a parchment-lined baking sheet. 8. Beat the egg and brush it over the surface of the twisted dough. Sprinkle sesame seeds on top for added texture and flavor. 9. Bake in the preheated oven for 25-30 minutes, or until the twist is golden brown and sounds hollow when tapped on the bottom. 10. Let it cool slightly before slicing and serving.
