* 1 cup active sourdough starter * 1 cup warm water (100°F/38°C) * 4 cups all-purpose flour * 2 tablespoons dried lavender flowers * 1/4 cup honey * 1 tablespoon sea salt * 1 tablespoon olive oil * 1/4 cup additional flour (for dusting)
1. In a large mixing bowl, combine the active sourdough starter and warm water, mixing until the starter is dissolved. 2. Add in the 4 cups of all-purpose flour, dried lavender flowers, honey, sea salt, and olive oil. Mix until a shaggy dough forms. 3. Turn the dough out onto a lightly floured surface and knead for about 10 minutes until the dough is smooth and elastic. 4. Place the kneaded dough into a lightly greased bowl, cover with a damp cloth, and let it rise in a warm area for about 4 to 6 hours or until doubled in size. 5. After the first rise, gently deflate the dough and shape it into a round loaf. Place it into a floured proofing basket (or bowl) to rise again for about 1-2 hours until it's puffy. 6. Preheat the oven to 450°F (232°C) with a Dutch oven inside to heat up. 7. Once the dough has risen, carefully remove the hot Dutch oven, and gently transfer the dough into it. Cover with the lid and bake for 30 minutes. 8. After 30 minutes, remove the lid and bake for an additional 15-20 minutes until the bread is golden brown and sounds hollow when tapped. 9. Remove the bread from the Dutch oven and allow it to cool on a wire rack before slicing.
