* 2 cups all-purpose flour * 1 cup sourdough starter (active and bubbly) * 1/2 cup warm water * 1/2 cup plain yogurt * 2 tablespoons olive oil * 1 tablespoon sugar * 1 teaspoon salt * 1 teaspoon baking powder * 2 teaspoons garam masala * 1 teaspoon turmeric powder * 1/2 teaspoon chili powder * 1/4 teaspoon cumin powder * Fresh cilantro for garnish * Butter for brushing
1. In a large mixing bowl, combine the all-purpose flour, salt, garam masala, turmeric powder, chili powder, and cumin powder. 2. In another bowl, mix the sourdough starter, warm water, yogurt, olive oil, and sugar until well combined. 3. Gradually add the wet mixture to the dry ingredients, stirring until a soft dough forms. 4. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic. 5. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place until doubled in size, about 2-3 hours. 6. Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball. 7. Roll out each ball on a lightly floured surface to form a oval shape, about 1/4 inch thick. 8. Preheat a skillet or grill pan over medium-high heat. Place one rolled-out naan on the hot skillet and cook for about 2-3 minutes until bubbles form on the surface. 9. Flip the naan and cook for another 2-3 minutes until golden brown and cooked through. 10. Remove from the skillet and brush with melted butter. Garnish with chopped fresh cilantro, if desired. 11. Repeat with remaining dough balls.
