Honey Almond Sourdough Granola Bars

* 2 cups rolled oats
* 1 cup whole almonds, roughly chopped
* 1/2 cup honey
* 1/2 cup sourdough starter
* 1/4 cup coconut oil, melted
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1/2 cup dried fruit (e.g., cranberries or raisins)
* 1/4 cup flaxseeds (optional)
1. Preheat the oven to 350°F (175°C) and line a baking dish (8x8 inches) with parchment paper.
2. In a large mixing bowl, combine the rolled oats, chopped almonds, salt, ground cinnamon, and flaxseeds if using.
3. In a separate bowl, mix together the honey, melted coconut oil, sourdough starter, and vanilla extract until well combined.
4. Pour the wet ingredients into the dry ingredients and stir until everything is evenly coated.
5. Transfer the granola mixture into the lined baking dish, pressing it down firmly to create an even layer.
6. Sprinkle the dried fruit on top and press it down into the mixture.
7. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
8. Remove from the oven and let the bars cool in the pan for about 10 minutes. Then lift the parchment paper to remove the bars from the pan.
9. Allow to cool completely on a wire rack before slicing into bars.
