* 2 cups all-purpose flour * 1 cup granulated sugar * 1/2 cup unsweetened cocoa powder * 1 tablespoon instant espresso powder * 1 teaspoon baking soda * 1/2 teaspoon baking powder * 1/2 teaspoon salt * 1/2 cup unsalted butter, softened * 1 cup buttermilk * 2 large eggs * 1 teaspoon vanilla extract * 1/2 cup chocolate chips * 1/4 cup brewed espresso, cooled
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. 2. In a large bowl, whisk together the flour, sugar, cocoa powder, instant espresso powder, baking soda, baking powder, and salt. 3. In another bowl, cream the softened butter until light and fluffy. Add the buttermilk, eggs, and vanilla extract, mixing until well combined. 4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. 5. Fold in the chocolate chips and cooled espresso until evenly distributed. 6. Pour the batter into the prepared loaf pan and smooth the top with a spatula. 7. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean. 8. Allow to cool in the pan for 10 minutes, then transfer the loaf to a wire rack to cool completely.
