Citrus Basil Sourdough Flatbreads

* 2 cups sourdough starter
* 3 cups all-purpose flour
* 1 1/2 teaspoons salt
* 1/2 cup warm water
* 1 tablespoon olive oil
* Zest of 1 lemon
* Zest of 1 lime
* 1/4 cup fresh basil, chopped
* 1 tablespoon honey (optional)
1. In a large mixing bowl, combine the sourdough starter, warm water, and olive oil. Mix until well combined.
2. Add the all-purpose flour, salt, lemon zest, lime zest, chopped basil, and honey (if using) to the mixture. Stir until a shaggy dough forms.
3. Knead the dough on a lightly floured surface for about 10 minutes until it becomes smooth and elastic.
4. Transfer the dough to a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 4-6 hours, or until doubled in size.
5. Once the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball and let them rest for 20 minutes under a kitchen towel.
6. Preheat your grill or skillet over medium heat. Roll out each dough ball into a flatbread shape, about 1/4 inch thick.
7. Cook each flatbread on the hot grill or skillet for 2-3 minutes on each side, until they are golden brown and cooked through.
8. Remove from heat and keep warm until ready to serve.
