* 3 cups all-purpose flour
* 1 cup warm milk (110°F)
* 1/4 cup granulated sugar
* 1/2 cup unsalted butter, melted
* 1/2 cup raisins
* 2 large eggs
* 1 packet (2 1/4 tsp) active dry yeast
* 1 tsp ground cinnamon
* 1/2 tsp salt
* 1/4 tsp ground nutmeg
* 1/2 cup chopped walnuts (optional)
* 1 tablespoon honey (for glazing)
1. In a small bowl, combine warm milk and sugar. Sprinkle yeast over the top and let sit for about 5-10 minutes, or until frothy.
2. In a large mixing bowl, mix flour, salt, cinnamon, and nutmeg together.
3. Add the melted butter, eggs, and yeast mixture to the dry ingredients. Stir until a dough forms.
4. Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.
5. Incorporate raisins and walnuts (if using) into the dough during the last minutes of kneading.
6. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
7. Preheat the oven to 350°F (175°C).
8. After the dough has risen, punch it down and shape it into a loaf. Place it in a greased 9x5 inch loaf pan.
9. Cover and let rise for another 30-45 minutes until it has risen above the edge of the pan.
10. Brush the top of the loaf with honey before placing it in the oven.
11. Bake for 30-35 minutes or until golden brown and a toothpick inserted into the center comes out clean.
12. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
